Smashed Burger Tacos

 

I love burgers. I love tacos. When I realized burger tacos were a thing, I immediately had to try it, and trust me, these do not disappoint. And for a big football game, why choose between two great dishes when you can eat them at the same time?

 

Technique Tip: Once you place your tacos in the pan, let them cook without interruption so your meat gets nicely browned and crispy.

 

Swap Options: Instead of ground beef, you can use ground turkey or chicken for a lower-fat option.

Ingredients

Special sauce

• 1/2cup mayo
• 1tablespoon yellow mustard
• 2teaspoons sweet relish
• 1tablespoon ketchup

• 1/2teaspoon white vinegar
• 1/4teaspoon paprika
• 1/4teaspoon garlic powder

Burgers

• 1pound ground beef
• 12flour tortillas, mini or street size
• kosher salt and freshly ground black pepper, to taste
• 1tablespoon vegetable oil

• 12slices American cheese
• 2cups shredded iceberg lettuce
• 24sliced pickles
• 1/2cup diced white onion

Preparation

1.  Combine all sauce ingredients in a bowl and mix well. Cover and refrigerate until tacos are ready. You can also make this sauce a day or two ahead.
2. Divide beef into 12 equal portions and roll into balls. 
3.  Place each ball on a tortilla and with clean hands, pound the beef until it is very thin and flattening out against the edges of the tortilla. Season with salt and pepper. 
4.  Heat vegetable oil in a large skillet over medium-high heat. 
5. Add three tacos (if they fit) to the pan, beef side down. Cook for 2 to 3 minutes before flipping, then reduce heat. 
6. Add a slice of cheese to each taco and cover with a lid until the cheese melts (another minute or so), then remove. Repeat with the remaining tacos. 
7. Add desired toppings (in this case lettuce, pickles and onions) and sauce, fold into a taco shape and enjoy!
